PANAMA Lost origin maya

Harvested in early February at Maya Estate, this batch of geisha cherries was fermented under 14 psi of pressure for 6 days. A mixed culture inoculum composed of Pichia kluyveri , Torulaspora delbrueckii , Framgarden Kveik and Lactobacillus plantarum was selected. The interaction between these microbes yields a complex array of volatile compounds that enhance the outstanding characteristics of the cherries. Following the fermentation, cherries remained in our drying facility for 39 days, until reaching target quality parameters.
